What other foods go well with stuffed peppers?

I plan on cooking dinner for my boyfriend on his birthday this month, and he requested stuffed peppers. Now, I’m not the most experienced cook in the world, but usually everything I cook turns out very well, so I’m willing to undertake the pepper challenge. My question is what else should I serve with the peppers? I was thinking rice, but that seems boring. Any ideas?

How can I preserve the green chili peppers in my garden?

Are brown seeds in hot peppers okay to eat?

They’re about half an inch long, shaped like Christmas tree lights, are really colorful (red yellow, orange and green), and supposed to be really hot.
Does anyone have pictures or know what they’re called?
